Teff Green pizza

150 g teff flour
1 tbp. ground chia seeds
1 tsp. baking powder (gluten free)
180-200 ml water + 2 tbp. olive oil
1 tsp. fresh thyme + 2 pinches of salt

1 tbp. vegan parmesan cheese


Guacamole – 1 large avocado + 1 garlic clove  + 1 pinch of cayenne pepper + 1/2 lemon juice
1/2 red onion + 1 tsp. coconut oil
2 large sliced pickles
7-10 cherry tomatoes
1/2 sweet green pepper
1 handful of arugula + chive


Prepare the dough. In a large bowl, mix  teff flour + baking powder + chia seed powder +  fresh thyme. Then, pour water + olive oil, and make it a ball. Spread your dough on a baking sheet lined with baking paper (with fingers because it is brittle), and let it rest for 30 mins. Sprinkle your vegan parmesan cheese and bake for 20 minutes at 190 ° C.?
Meanwhile, prepare the guacamole; Using a food processor, mix avocado + garlic + cayenne  pepper + lemon juice. Remove your pizza from the oven, and coat it with guacamole, and add vegetables (halved cherry tomatoes, sweet green pepper, chives, caramelized (in coconut oil) red onion slices, and arugula).
